Thai Fish Soup (Tom Yum)
Prep and cook time: 30 mins to 1 hour
Serves: 4
Ingredients
2 sticks lemon grass, sliced
3 red chillies, de-seeded and chopped
1/2 tsp turmeric or 1 tsp chopped fresh turmeric
4 kaffir lime leaves
1/2 teaspoon coriander seeds
2.5cm (1 inch) piece galangal or ginger, peeled and chopped
1 tbsp peanut oil
1litre (1 3/4 pints) shellfish stock
4 spring onions, finely chopped
2 tbsp fish sauce
110g (4oz) Chinese cabbage, finely sliced
juice of 1 lime
225g (8oz) cooked and peeled prawns
1 tbsp Thai basil
salt and freshly ground black pepper
Method
Put the lemon grass, chili, turmeric, lime leaves, coriander seeds and galangal into a food processor. Pound together to form a paste.

Heat the oil in a large frying pan, add the paste and stir fry over a low heat, add the stock and simmer over a low heat for 20 minutes.
Strain the stock into a clean saucepan add the spring onion, fish sauce and cabbage, simmer over a low heat for 7-10 minutes or until the cabbage is tender.
Add the lime juice, kaffir leaves, cooked prawns and basil to the stock, heat for 2-3 minutes or until the prawns are very hot. Season to taste with salt and pepper and serve very hot.

Cook's tip: the cooked prawns will harden and toughen if heated for too long - add them at the very last minute, but make sure that they are piping hot when served.

Oh god, I'm getting embroiled in this softball drama. I had just finished recording yesterday and Julia called me gloating that her stupid team beat the pants off Tom's team. Tom's team is worst in the league, which is why they asked him to be manager because hes a strong leader. So I met up with Julia at the bar after the game and she was still gloating. She said Tom was a fair manager but he told her she was a cheater. I didn't ask her why he said that. So Tom just called me and said her team were a bunch of blantant cheaters and assholes. He said Julia over-ran second base and she got tagged out but she flat out refused to leave the base. Tom was like "what am I supposed to do?" Tom said he would give anyone $50 that would hit a line drive to her face and some guy hit a line drive to her knee cap. When I got there she had ice on her knee. Heh. I don't want to get involved but I don't know, I think thats lame. I believe tom, hes played baseball his whole life and he really respects the game.
