NEW YORK (Reuters) - A dozen of New York's finest restaurants have agreed not to serve ``white'' veal that comes from young calves raised in crates and fed a diet that causes anemia, an animal welfare group official said on Thursday.
Farm Sanctuary said it has received letters pledging not to serve the veal from restaurants that include Tavern on the Green, Asia de Cuba, the Russian Tea Room, Babbo Ristorante, Le Grenouille, Park Avenue Cafe, The Four Seasons and Verbena.
Gene Bauston, Farm Sanctuary director, said the group has approached about 50 New York City restaurants and is continuing efforts to get additional pledges.
To produce white veal, calves are taken from their mothers and chained by the neck in small wooden crates that are only two feet (60 cm) wide. The calves cannot move and this prevents their muscles from developing so their meat remains soft. The calves are fed an all liquid diet that is designed to cause anemia and produce the pale-colored meat.
Bauston said the practice is illegal in Europe and that a bill has been introduced in Congress that would prohibit the inhumane production of veal in the United States.
