It does. I just looked it up. Recipes call for cooking it 40 minutes up to 2 hours. That's okay. I can make it before hand. It's all about what looks good at the fish market.

I believe to get it tender it does. I've never cooked it myself. But there's a great Greek restaurant downtown that has killer grilled octopuss smothered olive oil. a very mild olive oil. Probably from Spain. They used to have baby octop[uss salad. but they got rid of that. Apparently iy wasn't very popular. whole, little boiled octopie mixed in a salad. Strange but it was good, once you got ovr the texture of the invetibrae. My experience with them are rather limited. Boiled, grilled and raw.
